Gluten free lemon cake

You will need:

4 eggs
300 g sugar
270 g rice & tapioca flour
100 g butter
¼ tsp gluten free baking-powder
Juice out of 2 lemons
Lemon peel
Natural blackcurrant powder


Instructions:

For the base:

1.    Preheat oven to 175  degrees.
2.    Combine 2 eggs, butter and rice & tapioca flour.
3.    Mix everything until well combined.
4.    Bake at 175 degrees  for 25 minutes.

For the second layer

1.       Squeeze juice out of two lemons.
2.       Grate some lemon peel.
3.       Combine 2 eggs, sugar and gluten free baking-powder, lemon juice and grated peel.
4.       Mix everything until well combined.
5.       Pour this blend on the 1st prepared layer and bake the cake at 175 degrees for more 25 minutes or until a toothpick inserted in the center comes out clean.

To complete

1.       Prepare your table for delicious moment. Cover it with your favourite linen tablecloth, glamorise it with nice linen napkins and warm attractive colorful handmade plates.
2.       Divide the cake in a few small triangles.
3.       Choose the tastiest plates.
4.       Put a piece of cake in the plate.
5.       Pour some natural blackcurrant powder on it, add some berries and flowers if you wish.
